SIMPLE and EASY Egg Dish casserole.

One of my favorite meals to make for the family is an egg dish casserole. I love this recipe because it calls for basic ingredients that we almost always have at home. I also love that it is a make ahead dish the night before that can be served for Breakfast, Lunch, or dinner!!

Ingredients:

6-8 slices of bread ( I save all of my crust in the freezer in a bread bag. When I go to make the casserole I just pour them out and into the bottom of the pan.)

12 eggs

3 cups of milk

Ham or 2 packs of Brown and Serve Saugsage

Chedder Cheese

Salt and pepper to taste

This casserole is so easy to make which is why I LOVE it. Take your largest glass pan I use a 15X10 pan. (Adjust your ingredients accordingly if using a smaller pan) Coat the bottom of it with PAM spray. Then break up your bread into bite size pieces so that it covers the bottom. Next top with your favorite meat or veggies. I use the link saugsage that is microwaveable. I microwave for 3 minutes and then put them in my food processor. I then Sprinkle the meat over the bread. If I don't use saugsage and I have frozen Christmas or Easter Ham I will sprinkle that on. You can even use ham lunchmeat cut into bite size pieces or chunks. Next sprinkle your favorite cheese on top. I use Chedder. Then in a bowl beat your eggs, salt and pepper to taste, milk and pour on top of the casserole making sure everything is covered. Cover this dish and let stand overnight in the fridge. In the AM plan for 35-45 minutes to cook. I bake at 375. I set the timer for 30 and check it. As I don't always measure my ingredients my cook time varies. You want your casserole to be lightly browned and the eggs done.

This is a wonderful hot meal that ALL of my family loves. Open a can of fruit or a jar of applesauce and voila dinner is served. My husband often eats his with some hot sauce or Salsa. On days where I know I am going to be away I have one ready to be baked in the fridge so that my husband just needs to bake it and open the can of fruit. Simple and easy which he and I both love!!
