Today when Maddie and I were shopping for groceries to go on our trip she asked me if I had the ingredients to make my moms famous egg sandwiches. I thought I would share this with you as it has been a tradition for the last 45 years or more in my family.
I am not sure how far back these originate or if my mom invented them but they sure are wonderful. Above is a picture of your ingredients. Below the secret to my moms famous "egg sammies".
Ingredients:
- White bread ,
- Hellmans Mayo
- eggs fried hard to perfection
- salt and pepper to taste
- saran wrap
This is a very simple recipe with very little instruction needed. Begin by frying your eggs hard. 1 fried egg per sandwich. While the eggs are cooking have your bread laying on the piece of saran wrap ,with the mayonaise already on the bread. Once the egg is done place it on the bread and then WRAP them while they are fresh and hot..(This is the key to the sandwich ..wrapping while it is hot.) I then let them cool before placing them in the fridge/cooler.
They are perfect for travelling and you can eat them for breakfast, lunch, or dinner. I have to say usually in our car they do not make it to lunchtime!! Enjoy
People, before you snurl your noses up at this - try them! I had a friend once who thought it sounded disgusting. I made him one and he ranted and raved at how good it was and how I could sell them!

We ate them tonight at the hotel for dinner with strawberries and a glazed donut hole. The kids thought it was the best. :)
